Fish Pulusu.

Ingredients:

  • Fish-1lb
  • Tamrind -1 lemon size
  • Onion-1/2 (cut into large cubes)
  • corrainder leaves-few
  • Tomoto-1 medium(cut into large cubes)
  • Turmeric-little

Masala:

  • Onion-1 large

  • Red chillies-8(adjust to your spice level)
  • Garlic pods-3
  • jeera -1 spoon
  • Tomoto-1 medium size
    Cut onions length wise and saute them in tspoon oil,cool it down.Add above ingredients and grind it to smooth paste.

Seasoning:

  • Mustard seeds-1/2 tspoon
  • Red chilli pods-few
  • Curry leaves-few
  • oil -2 tbspoons

Preparation Method:

  • Soak tamrind in warm water and extract juice from it and keep aside.

  • Take a wide bottomed vessel on stove ,add oil and let it be hot.once it is hot add seasonings,onion cubes and tomoto cubes,fry them for a while.

  • Now add masala paste and fry it for 2 min and add tamrind juice to it.

  • Add turmeric powder ,salt as per taste and some water(if required) and let it boil for about 10 -15 min in medium flame with lid closed.
  • Now add fish pieces to the boiling pulusu and corriander leaves.

  • Switch of the stove once the fish is cooked.




If you dont like to add raw fish directly to pulusu,apply little bit salt and chilli powder to fish pieces ,fry them on a pan or microwave it for 5 min each side.

Or you can fry them in seasoning but this may result in breaking the pieces (depends on the kind of fish used)

Note:See that sour and salt tastes little bit more in pulusu before adding fish pieces (because once you add fish pieces the tastes will come down)

Same recipe can be used by adding boiled eggs also.

Vegetarians need not be worried.They can use same recipe substituting fish by paneer(home made)or by Bhendi.

If u use bhendi ,saute them in seasoning itself with one more tomoto .




Spicy Rasam

Ingredients:

  • Tomato - 1 medium size
  • Tamrind pulp -1 tspoon
  • Turmeric Powder-1/2 tspoon
  • Salt -As per taste
  • corainder Leaves-Fist full
  • Garlic pod -1


Powder:

  • Jeera -1 tspoon
  • Toordal-1/2tspoon
  • pepper corns-1/2 tspoon
  • Whole red chilli-1


grind all the above ingredients into a coarse powder.

For seasoning:

  • Hing - apinch
  • Mustard seeds-1/2 spoon
  • Redchilli pods-2
  • curry leaves -few

Procedure:

  • In a bowl smash tomato n tamrind and add 4 cups of water ,salt,turmeric powder ,grinded powder , crushed garlic and corriander leaves.
  • In a large vessel add 2 tspoons of oil and add seasoning and let it splutter,now add the above liquid and keep it on a low flame so that rasam becomes hot.
  • Dont let dis rasam to boil .
  • Switch of the stove immediatly when it too hot.
  • Serve hot.

Ingredients:
  • Brinjal---2 small(cut into pieces)

  • Lady's fingers---4-5(cut into 1inch pieces)

  • Pumpkin---6-7 cubes

  • Bottle guard---6-7 cubes

  • Raddish---6-7 pieces

  • Tomato---1 small(cubed)

  • Sweet potato---6-7 pieces

  • Tamrind---big lemon size

  • sugar---3-4 tbs

  • Salt---as per taste

  • Turmeric---2 pinch

For Tampering:

  • Mustard seeds---1/4 tsp

  • Red chilly pieces---4 to 5pieces

  • split black gram---1/2 tsp

  • curry leaves---10 leaves

  • Oil---1tsp

Preparation:

  • Put the vessel on stove. Put oil in it. Add all the ingredients for tampering. add tomato pieces once they splutter.

  • Take pulp out of tamrind by adding 2, 3 glasses of water. Add salt, sugar and turmeric to it.

  • Add this tamrind juice to the tomatoes.

  • once it boils add all the vegetables to it.

  • Once it boils reduce the flame and let the veggies cook.

  • Once they cook check the taste.

  • Serve with steamed rice.

Chicken And Egg Soup

Ingredients:


  • Chicken---150gms(cut into small pieces)
  • Water---2 cups(2 servings)to cook
  • Tasting salt(china salt)---1 pinch
  • Soya sauce---1 tbs
  • Salt---Adjust to taste
  • Pepper powder---Adjust to taste
  • Green chilly---1
  • chilly sauce---1tsp
  • Chicken Pakoda(cut into small pieces)optional
  • Egg white---1egg
  • Corn Flour---1tbs
Preparation



  • Cook chicken in the water with salt
  • when almost done add pepper, tasting salt, green chilly, soya sauce.chilly salt.
  • cook for 5 min
  • Meanwhile in a cup mix egg white and corn flour with spoon properly.
  • Pour this mix into the soup from some height, so that the egg forms into strips.
  • cook for 2 more min.
  • Before serving add the chicken pakoda pieces.
